Suzanne’s Apple Fritters

I have another confession to make.  I’m addicted to apple fritters, so much so that I can’t make them all that often.  I’ve been known to wake up in the middle of the night, the fritters calling out to me in my dreams.  Okay, I said earlier that if you don’t judge me, I won’t judge you.  Anyway, these are quite lovely, either brushed with a simple vanilla glaze, a touch of powdered sugar, or even some apple butter spread across each bite, in case you’re in a particularly apple-flavored mood.

Ingredients

3⁄4 cup all-purpose flour

1⁄4 cup sugar (white)

1 tablespoon baking powder

1 tablespoon cinnamon

1⁄4 teaspoon salt

1⁄3 cup milk (2% or whole)

1 egg, beaten

1⁄2 cup chopped apple (something tart; I like Granny Smiths for this)

Directions

Preheat canola oil to 375°F.

Sift dry ingredients together, then stir in milk and beaten egg.

Fold in chopped apple, and then drop teaspoon of batter into the hot oil and repeat.

Flip after 2 minutes, and continue frying for 1 minute, or until golden.

Makes about a dozen small fritters
