Suzanne’s Holiday Eggnog Donuts

Okay, the truth is that this one is all me.  I was having some fun in the kitchen one holiday season, and I decided to use straight eggnog from the carton instead of whole milk in one of my donut recipes.  Wow, was it good!  It’s become a favorite of my family over the years, and it just doesn’t seem like Christmas without them.  It just goes to show that sometimes I get the best results when I’m just playing around!

Ingredients

Mixed

1 egg, beaten

1⁄2 cup sugar, white granulated

1⁄2 cup eggnog (whole milk can be substituted)

2 tablespoons butter, melted

1 teaspoon vanilla extract (omit if using eggnog)

Sifted

1 1⁄2 cups all-purpose flour

2 teaspoons baking powder

1⁄4 teaspoon nutmeg

Pinch of salt

Directions

Heat canola oil to 375°F.

Beat egg, then add sugar, eggnog, and melted butter.

In separate bowl, sift together flour, baking powder, nutmeg, and salt.

Slowly add sifted ingredients to wet mix just until combined.

Drop a teaspoon of batter into the hot oil and repeat.

After 2 minutes, check, and then flip, frying for another minute on the other side.

Drain on paper towels and then enjoy.

Yields 12–16 donuts
