THESE BURGERS ARE USUALLY LIGHTER AND HAVE LESS FAT than the Classic or Adventurous Burgers. They are also more delicate, and you should not speak to them harshly or flip them in the pan too brusquely, as they might not hold together. These are probably not the burgers you would grill while tailgating before the big game. And, though it’s not in keeping with the usual burger zeitgeist, you might feel like serving a decent wine with them, which is fine. The fish or seafood burgers require a slightly lower flame—usually medium-high—so as not to overcook the outside before the inside is done. Because the burgers are more delicate, if you want to cook them on the barbecue, make sure the grate is very clean and lightly oiled. Refrigerating the burgers for at least an hour will also help hold them together. An even better method is to cook them in one of the grill pans designed for grilling vegetables. These rest right on the grates and will give you a flat surface better suited for grilling these burgers.
