This burger is luxurious, even indulgent. Man overboard! It’s like the classic lobster roll shaped into a burger and then seared. It’s not just an exceptional burger—it’s exceptional food.
MAKES 4 BURGERS
To make the burgers: In a large pot of boiling water, cook the lobsters for 8 minutes. Transfer to a large bowl and let them cool. Remove the meat from the tail and claws and chop into 1/2-inch pieces.
Place the lobster meat in a medium bowl. Add the remaining burger ingredients and mix until well combined. The mixture should be slightly moist.
Shape the mixture into 4 burgers about 3/4 inch thick and 4 inches across. Arrange the burgers on a platter so they aren’t touching, cover with plastic, and refrigerate for at least 1 hour and up to 6 hours.
To make the Lime Dressing: Mix all the dressing ingredients together in a small bowl. Cover with plastic wrap and refrigerate until ready to use.
Place a skillet, preferably cast-iron, over medium-high heat and add the oil and butter. Just when the butter stops sizzling, arrange the chilled burgers in the pan so they aren’t touching and cook, uncovered, for 2 minutes, until a nice crust forms on the bottom, Turn carefully and cook about 2 minutes more.
Serve on the hamburger buns, topped with the Lime Dressing.
Note: These burgers are too delicate to cook on an outdoor grill.
