Egg Cream

Cold beer, margueritas, a bottle of soda pop—each of these goes with some burgers, but only the diner-classic egg cream goes with almost any burger. It’s the perfect drink to have with a mouthwatering burger and a big plate of fries—or it may be in its light but rich self the only side dish you need.

Fill a large drinking glass one-fourth full of milk. Add 2 to 3 tablespoons of chocolate syrup and stir well. Slowly pour cold seltzer over the back of a spoon held inside the glass (to keep from fizzing over) until the glass is near full. Stir. The foam at the top (which looks like beaten egg whites) gives the drink its name.

Drink.

Repeat.
