Baked

This chapter offers another set of recipes that are meant for the table, and for sharing. It also contains two of my favourites in the book: moussaka, thanks to my sister, and cassoulet, thanks to my friend Isobel. Isobel once cooked me a cassoulet so delicious that I’ve been chasing after that flavour in mine ever since. Sadly I don’t have her talent so I am yet to get there!

These are forgiving recipes. They will take a bit of improvising, so as long as you follow the methods you can play with the flavours, which is a great way of developing your own style and favourites. They will also freeze very well, so making a large batch and freezing what is left is a good way of having your own range of ready meals for when you can’t be bothered to cook from scratch.
