Oh, hey hottie! This chilled summer treat will help you keep your cool after a total meltdown. It’s low in calories, highly tasty, and Wednesday Pink approved. Regina swears it’s only 120 calories and 48 calories from fat (if you garnish with avocado).
• Place 6 cups of the watermelon, the tomatoes, mint, lime juice, agave, and salt in the food processor and pulse. You’ll want a rustic, slightly chunky texture, so don’t overprocess. Pour into a storage bowl with a lid and stir in the final cup of watermelon chunks. Cover and chill for at least half an hour before serving.
• When ready to serve, divide chilled soup among four bowls and garnish with feta, mint, and avocado. Eat immediately.
