Bite-Sized Smoked Salmon Frittatas
A fun and healthy way of making frittatas, these are easy to store in the fridge and always delicious.
Ingredients
Makes 20 mini frittatas
4 large eggs
1⁄4 cup light coconut milk
Salt to taste
1⁄4 teaspoon freshly ground black pepper
3 ounces shredded smoked salmon
1⁄4 cup chopped fresh dill
Variation
You can replace the dill with chopped fresh parsley or replace salmon with turkey bacon.
- Preheat the oven to 375°F. Spray a 24-cup mini muffin tin with nonstick spray.
- In a medium bowl, whisk together the eggs, coconut milk, salt, and pepper.
- Add the salmon and dill. Mix well.
- Fill the prepared muffin tin cups 3⁄4 full with the mixture.
- Bake for 7–10 minutes or until a toothpick inserted into the center of a frittata comes out clean.
- Remove from the oven and loosen the frittatas with a rubber spatula. Enjoy warm or cold.
