Bite-Sized Smoked Salmon Frittatas

A fun and healthy way of making frittatas, these are easy to store in the fridge and always delicious.

Ingredients

Makes 20 mini frittatas

4 large eggs

14 cup light coconut milk

Salt to taste

14 teaspoon freshly ground black pepper

3 ounces shredded smoked salmon

14 cup chopped fresh dill

Variation

You can replace the dill with chopped fresh parsley or replace salmon with turkey bacon.

  1. Preheat the oven to 375°F. Spray a 24-cup mini muffin tin with nonstick spray.
  2. In a medium bowl, whisk together the eggs, coconut milk, salt, and pepper.
  3. Add the salmon and dill. Mix well.
  4. Fill the prepared muffin tin cups 34 full with the mixture.
  5. Bake for 7–10 minutes or until a toothpick inserted into the center of a frittata comes out clean.
  6. Remove from the oven and loosen the frittatas with a rubber spatula. Enjoy warm or cold.
