Spicy Zucchini Egg Scramble

This is a favorite breakfast dish for those who desire a spicy kick in the morning. The cayenne pepper is used as a natural painkiller and anti-inflammatory.

Ingredients

Serves 2

2 tablespoons olive oil

1 medium zucchini, diced

Salt and freshly ground black pepper to taste

Pinch cayenne pepper, or to taste

4 large eggs

  1. In a large skillet over medium heat, heat up the olive oil.
  2. Add the zucchini and sauté until brown and soft, about 3 minutes.
  3. Season the zucchini with salt, pepper, and cayenne pepper.
  4. Add the eggs one at a time.
  5. Scramble the eggs using a rubber spatula. If desired, add more salt to taste.
  6. Cook for about 3–5 minutes, until the eggs are cooked to the desired doneness. Enjoy warm.
