Spicy Zucchini Egg Scramble
This is a favorite breakfast dish for those who desire a spicy kick in the morning. The cayenne pepper is used as a natural painkiller and anti-inflammatory.
Ingredients

2 tablespoons olive oil
1 medium zucchini, diced
Salt and freshly ground black pepper to taste
Pinch cayenne pepper, or to taste
4 large eggs
- In a large skillet over medium heat, heat up the olive oil.
- Add the zucchini and sauté until brown and soft, about 3 minutes.
- Season the zucchini with salt, pepper, and cayenne pepper.
- Add the eggs one at a time.
- Scramble the eggs using a rubber spatula. If desired, add more salt to taste.
- Cook for about 3–5 minutes, until the eggs are cooked to the desired doneness. Enjoy warm.
