Salvadoran Huevos Picados con Ejotes (Green Bean Scramble)

1 cup fresh green beans cut into 1⁄4" pieces
1⁄4 cup chopped white onion
Salt and freshly ground black pepper to taste
8 large eggs

- In a large skillet over medium heat, heat up the olive oil.
- Add the green beans and onions and sauté for 5 minutes or until soft. Season with salt and pepper.
- Add the eggs one at a time, and season the eggs with salt and pepper. Using a rubber spatula, scramble the eggs. Cook the eggs for about 4 minutes or until they have reached the desire doneness.
- Serve the eggs garnished with green onions.
