Salvadoran Huevos Picados con Ejotes (Green Bean Scramble)

This is a simple and delicious recipe, commonly eaten in the small Central American country of El Salvador.

2 tablespoons olive oil

1 cup fresh green beans cut into 14" pieces

14 cup chopped white onion

Salt and freshly ground black pepper to taste

8 large eggs

Sliced green onions, for garnish

  1. In a large skillet over medium heat, heat up the olive oil.
  2. Add the green beans and onions and sauté for 5 minutes or until soft. Season with salt and pepper.
  3. Add the eggs one at a time, and season the eggs with salt and pepper. Using a rubber spatula, scramble the eggs. Cook the eggs for about 4 minutes or until they have reached the desire doneness.
  4. Serve the eggs garnished with green onions.
