Spicy Kale Scramble

This is a great post-workout breakfast, providing healthy proteins and a healthy amount of greens.

Ingredients

Serves 1

1 tablespoon olive oil

1 cup chopped kale

3 large eggs

2 teaspoons turmeric

Salt and freshly ground black pepper to taste

Pinch cayenne pepper

Feel free to add your favorite greens to this recipe. Spinach, arugula, and collard greens work great!

  1. In a medium skillet over medium heat, heat the oil.
  2. Add the kale and cook, stirring constantly, for 3 minutes. Add the eggs one at a time, or beat the eggs prior to adding them, this will give a fluffier texture.
  3. Immediately add the turmeric, salt, pepper, and cayenne pepper.
  4. Scramble the eggs and kale.
  5. Cook until the eggs are fully cooked; this process takes 3–4 minutes. Serve immediately.
