Brown Rice Frittata

A frittata is the Italian version of the American omelet. The brown rice gives it a nice chewy texture.

Ingredients

Serves 1

3 large eggs

14 cup Resistant Starch Brown Rice (see recipe in Chapter 11)

1 tablespoon chopped fresh basil

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

Try It with Different Herbs!

Try this recipe with your favorite herbs. Italian parsley works great or regular parsley works just great if Italian isn’t available.

  1. In a medium bowl, mix the eggs, rice, basil, salt, and pepper. Whisk together all the ingredients.
  2. In an 8" pan over medium heat, heat the oil.
  3. Add the egg mixture to the pan and cover. Cook for about 3 minutes, until the eggs are almost set.
  4. Flip the frittata and cook for another 3 minutes.
  5. Serve immediately. Garnish with extra chopped basil if desired.
