Halibut with Olives and Arugula
To turn this dish into a salad simply use the raw arugula and olives as a salad, place the cooked fish fillet on top, and dress it with olive oil, lemon, salt, and pepper.
Ingredients
Serves 2
3 tablespoons olive oil
2 (8-ounce) halibut fillets
Salt to taste
Freshly ground black pepper to taste
1 cup sliced kalamata olives
2 cups fresh arugula
- In a large skillet, heat the oil over medium-high heat.
- Season the fish with salt and pepper. Add the fish to the skillet and cook the fish for 4 minutes per side.
- Remove the fish from the pan and set aside. Reduce the heat to medium.
- Add the olives and arugula to the pan and season with salt and pepper. Cook for 4 minutes.
- Pour this mixture on top of the fish fillets and serve.
