Halibut with Olives and Arugula

To turn this dish into a salad simply use the raw arugula and olives as a salad, place the cooked fish fillet on top, and dress it with olive oil, lemon, salt, and pepper.

Ingredients

Serves 2

3 tablespoons olive oil

2 (8-ounce) halibut fillets

Salt to taste

Freshly ground black pepper to taste

1 cup sliced kalamata olives

2 cups fresh arugula

  1. In a large skillet, heat the oil over medium-high heat.
  2. Season the fish with salt and pepper. Add the fish to the skillet and cook the fish for 4 minutes per side.
  3. Remove the fish from the pan and set aside. Reduce the heat to medium.
  4. Add the olives and arugula to the pan and season with salt and pepper. Cook for 4 minutes.
  5. Pour this mixture on top of the fish fillets and serve.
