Herbes de Provence–Crusted Halibut

Be transported to the southeastern region of France with this decadent fish recipe. Halibut is lean fish, containing 50 percent less fat than salmon.

Ingredients

Serves 2

2 tablespoons olive oil

1 teaspoon sea salt

2 teaspoons freshly ground black pepper

2 tablespoons Herbes de Provence

1 pound halibut, cut into 2 (8-ounce) fillets

  1. Preheat the oven to 350°F.
  2. In a large skillet over medium-high heat, heat the oil.
  3. Meanwhile, sprinkle the salt, pepper, and Herbes de Provence on the flesh side of the fish. Make sure the herbs evenly cover the fish; this will help create a nice crust.
  4. Place the fish fillets flesh-side down in the skillet and cook for 5 minutes, until it has a nice brown crust.
  5. Place the fillets skin side down in a medium baking dish. Place in the oven and bake for 4–5 minutes.
