Indian-Spiced Chicken Tenders

Ingredients

Serves 4–6

1 cup light coconut milk

1 teaspoon ground turmeric

1 teaspoon garam masala

1 teaspoon ground coriander

1 teaspoon sea salt

1 teaspoon freshly ground black pepper

Pinch cayenne pepper

1 tablespoon olive oil

1 tablespoon lemon juice

2 pounds boneless, skinless chicken tenders

This magnificent blend combines cardamom, cinnamon, cloves, cumin, black pepper, and coriander. It is a staple in many Indian dishes.

  1. In a medium bowl, combine the coconut milk, spices, oil, and lemon juice. Whisk them together.
  2. Meanwhile, place the chicken tenders in an 8" square baking dish.
  3. Pour the marinade over the chicken, making sure that every piece is covered with the mixture.
  4. Cover with plastic wrap and refrigerate for 1 hour or overnight for more taste.
  5. Preheat the oven to 350°F.
  6. Bake the chicken for 40 minutes. Enjoy over resistant starch brown rice.
