Spanish Lamb Steaks

This marvelous recipe is great served as tapas at parties. If you’d like to serve this recipe at a party, cut the lamb into cubes before cooking. Use toothpicks to serve them on a big platter.

Ingredients

14 cup orange juice

212 tablespoons lemon juice

2 tablespoons lemon zest

3 teaspoons salt

1 tablespoon freshly ground black pepper

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon chopped fresh thyme

2 cloves garlic, chopped finely

1 medium purple onion, chopped finely

12 cup plus 2 tablespoons olive oil, divided

2 pounds lamb leg, cut into 4 (8-ounce) steak-sized pieces

  1. In a medium bowl, combine the orange juice, lemon juice, lemon zest, salt, pepper, cumin, coriander, thyme, garlic, onion and 12 cup olive oil. Whisk to incorporate all the ingredients.
  2. Pour the marinade over the lamb steaks and let marinate in the refrigerator overnight, or for at least 5 hours.
  3. In a large pan over medium-high heat, heat the 2 tablespoons olive oil.
  4. Cook the lamb steaks for 4 minutes per side, or until they reach the desired doneness.
