This Greek-style marinade works great on lamb chops, or lamb loin cooked over open fire. If you don’t have access to fresh oregano, try using dried oregano or fresh or dried rosemary.

Makes 1 cup
1 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 cup chopped fresh oregano, or 1⁄2 cup dried
11⁄2 teaspoons salt
11⁄2 teaspoons freshly ground black pepper
1 teaspoon ground cumin
3 cloves garlic, finely chopped
