Lamb Marinade

This Greek-style marinade works great on lamb chops, or lamb loin cooked over open fire. If you don’t have access to fresh oregano, try using dried oregano or fresh or dried rosemary.

Ingredients

Makes 1 cup

1 cup extra-virgin olive oil

2 tablespoons fresh lemon juice

1 cup chopped fresh oregano, or 12 cup dried

112 teaspoons salt

112 teaspoons freshly ground black pepper

1 teaspoon ground cumin

3 cloves garlic, finely chopped

  1. In a large bowl, whisk together all the ingredients.
  2. Immediately pour over lamb, and let marinate in the refrigerator for 2 hours or overnight for more flavor.
