Refreshing Avocado Soup

Enjoy this soup as an appetizer to any meal, or add some protein to make it a complete meal. You can also give this soup a creamy touch by adding 14 cup light coconut milk.

Ingredients

Serves 2

2 large ripe avocados, peeled

1 teaspoon fresh lemon juice

1 medium cucumber

34 cup gluten-free chicken stock

1 medium jalapeño pepper, seeded

5 sprigs fresh cilantro

Salt and freshly ground black pepper to taste

  1. Place all the ingredients in a food processor. Blend until you have a creamy soup.
  2. Taste the soup for salt. Add more if needed.
  3. If the soup is too watery, add more avocado, or if the soup is too thick, add more chicken stock.
  4. Serve cold.
