Cucumber Mint Soup

This is the perfect soup to serve as an appetizer on a hot summer day.

Ingredients

Serves 2

12 large cucumbers, peeled

1 medium avocado, pit removed

Juice of 1 lemon

1 cup fresh mint

Salt and freshly ground black pepper to taste

Add More Texture

If you desire more texture, cut one cucumber into small chunks and add to the soup as garnish.

  1. Place the cucumbers, avocado, lemon juice, and mint in a blender or food processor. Blend until creamy and smooth.
  2. Add salt and pepper to taste and blend again.
  3. Serve cold, and add a few mint leaves for garnish.
