Cucumber and Green Bean Salad

Enjoy this salad with grilled chicken, fish, or simply eat it just the way it is. Feel free to add a pinch of cayenne pepper for heat.

Ingredients

Serves 4

2 pounds green beans, ends removed

4 medium cucumbers, peeled and chopped into 1" chunks

1 tablespoon extra-virgin olive oil

Juice of 3 lemons

Salt and freshly ground black pepper to taste

  1. Bring water to a boil in a medium pot and cook the green beans for 5 minutes. You may steam them if you wish.
  2. Remove from heat, strain the green beans, and set aside.
  3. In a large salad bowl, combine the green beans and cucumber chunks.
  4. Add the olive oil and lemon juice. Do not add the dressing ingredients if you’re not going to eat immediately.
  5. Toss the salad to make sure that every green bean and cucumber is coated with oil and lemon.
  6. Season with salt and pepper. Serve immediately.
