Cucumber and Green Bean Salad
Enjoy this salad with grilled chicken, fish, or simply eat it just the way it is. Feel free to add a pinch of cayenne pepper for heat.
Ingredients
Serves 4
2 pounds green beans, ends removed
4 medium cucumbers, peeled and chopped into 1" chunks
1 tablespoon extra-virgin olive oil
Juice of 3 lemons
Salt and freshly ground black pepper to taste
- Bring water to a boil in a medium pot and cook the green beans for 5 minutes. You may steam them if you wish.
- Remove from heat, strain the green beans, and set aside.
- In a large salad bowl, combine the green beans and cucumber chunks.
- Add the olive oil and lemon juice. Do not add the dressing ingredients if you’re not going to eat immediately.
- Toss the salad to make sure that every green bean and cucumber is coated with oil and lemon.
- Season with salt and pepper. Serve immediately.
