Ginger Turmeric Potato Salad

This recipe combines all the flavors that you love from traditional potato salad, with all the added health benefits of ginger and turmeric.

Ingredients

Serves 4

3 cups Resistant Starch Potatoes (see recipe in Chapter 11), cut into cubes

2 medium stalks celery, diced

2 tablespoons chopped fresh dill

12 cup homemade mayonnaise

1 teaspoon ground ginger

1 teaspoon ground turmeric

1 teaspoon salt, or more to taste

1 teaspoon freshly ground black pepper

Red Potatoes

This recipe works with any type of potatoes. However, it is recommended that you try using red potatoes with the skin on. It adds great color and the perfect combination of starch and buttery softness.

  1. In a large salad bowl, combine the potatoes, celery, and dill.
  2. Add the mayonnaise and stir to combine.
  3. Add the ginger, turmeric, salt, and pepper. Stir again to combine all ingredients.
  4. Taste the salad to see if it needs more salt. Serve.
