Mango and Jicama Salad

This salad is a sweet and crunchy mouth-watering combination that will be the best complement to your grilled dishes.

Ingredients

3 tablespoons extra-virgin olive oil

Juice of 2 medium lemons

Salt and freshly ground black pepper to taste

2 cups peeled and cubed jicama

2 cups cubed ripe mango

1 small purple onion, diced

14 cup chopped fresh cilantro

Full Vegetarian Meal

If you wish to make this meal a full vegetarian meal, add 2 cubed avocados. The avocado will add more texture and protein.

  1. In a small bowl, combine the oil, lemon juice, salt, and pepper.
  2. In a large bowl, combine the jicama, mango, onion, and cilantro.
  3. Add the dressing and toss the salad with a wooden spoon.
  4. Taste the salad for salt and pepper. Serve immediately.
