Blood Orange and Arugula Salad

They say you eat with your eyes first. This salad will sure make your mouth water just by looking at it.

Ingredients

Serves 2

Juice of 1 orange

Juice of 1 lemon

14 cup extra-virgin olive oil

Salt and freshly ground black pepper to taste

2 cups fresh arugula

2 blood oranges, peeled and cut into long slices

Green onions, sliced for garnish

Variation

If you can’t find blood oranges, simply use regular oranges. The taste will not be affected. You may also combine the two different oranges for a more attractive color.

  1. Combine the orange juice, lemon juice, oil, salt, and pepper in a small bowl. Whisk well to combine, or put in a blender.
  2. In a large bowl, combine the arugula and sliced oranges. Pour the dressing onto the salad and toss. Garnish with green onions and serve.
