Breakfast Zucchini

Want to cut down on calories for breakfast? Use this recipe to replace breakfast potatoes.

Ingredients

Serves 2

2 tablespoons olive oil

3 large zucchini, diced

14 cup chopped fresh dill

Salt and freshly ground black pepper to taste

1 tablespoon dried basil

Spicy Kick

If you like a spicy kick, add some cayenne pepper to the zucchini a minute before they are fully cooked.

  1. Heat the oil in a large pan over medium heat.
  2. Add the zucchini and fresh dill. Cook for 3 minutes, stirring occasionally. Season with salt and pepper.
  3. Sprinkle with dried basil and cook for another 2 minutes.
  4. Serve warm.
