Curly Carrot Strings

A fun, tasty, and elegant way of eating carrots. During the winter months you may find purple and white carrots. Combine the colors to achieve a beautiful and colorful recipe.

Ingredients

Serves 4

9 large carrots, peeled

3 tablespoons olive oil

1 teaspoon ground ginger

2 tablespoons ground turmeric

Pinch cayenne pepper

Salt and freshly ground black pepper to taste

  1. In a medium salad bowl, shave the carrots into long, flat strings using a potato peeler.
  2. Heat the oil in a large pan over medium heat. Add the carrots to the hot oil.
  3. Season immediately with ginger, turmeric, cayenne, salt, and pepper. Stir to make sure every string is coated with seasoning. Cook for 5 minutes, until the carrots are translucent.
  4. Serve warm.
