Squash Blossom Stir-Fry

When available, squash blossoms are a fun and gourmet vegetable to serve. They are mild in flavor and easy to cook.

Ingredients

Serves 2

2 tablespoons extra virgin olive oil2 medium shallots, chopped

30 squash blossoms, rinsed and dried

1 teaspoon salt

1 teaspoon freshly ground black pepper

1 teaspoon turmeric

2 tablespoons gluten-free chicken stock

Serve on Rice

This recipe is delicious served on a bed of Resistant Starch Brown Rice (see recipe in Chapter 11). Top it off with some avocado for a little protein.

  1. Heat the oil over medium heat in a large pan.
  2. Add the shallots and cook for 2 minutes, until translucent.
  3. Immediately add the squash blossoms, and stir. Season with salt, pepper, and turmeric. Stir frequently and cook for 2 more minutes.
  4. Add the chicken stock and stir. Most of the chicken stock will evaporate.
  5. Cook for 5 minutes.
