Lemon and Pepper Spaghetti Squash

Spaghetti squash is an excellent and healthy alternative to regular noodles. It is lower in calories but still gives you the texture of noodles.

Ingredients

Serves 4

1 medium spaghetti squash

4 medium stalks celery, sliced

Juice of 2 medium lemons

Zest of 1 medium lemon

Salt and freshly ground black pepper to taste

14 cup extra-virgin olive oil

2 teaspoons red pepper flakes

Bell Pepper Variation

If you don’t have issues with bell pepper, add 12 cup of diced red bell pepper and 12 cup of diced green bell peppers to this recipe.

  1. In a large pot boil enough water to cover the squash. Cut the squash in half lengthwise and add to the pot. Cook for 30 minutes, until soft.
  2. Remove from heat, drain the water, and let the squash cool. Use a fork to remove the meat.
  3. In a medium bowl, combine the squash meat, celery, lemon juice, lemon zest, and olive oil. Season with salt and pepper to taste.
  4. Add the pepper flakes. Serve.
