Sautéed Mushrooms and Spinach

Make this recipe whenever you want a fast and easy vegetable side dish. It cooks in less than 10 minutes.

Ingredients

Serves 2

2 tablespoons extra-virgin olive oil

4 cups sliced white mushrooms

1 clove garlic, finely chopped

Salt and freshly ground black pepper to taste

4 cups fresh spinach

Asian-Style Variation

For an Asian variation of this dish, omit the salt, add 2 tablespoons chopped gingerroot, and season with Braggs Liquid Aminos. The Braggs will give it a soy sauce flavor.

  1. In a large skillet over medium heat, heat the oil.
  2. Add the mushrooms and garlic to the skillet and season with salt and pepper. Cook for 4 minutes, stirring frequently.
  3. Add the spinach. The spinach will reduce in size in about 2 minutes.
  4. Season the spinach with salt and pepper. Cook for 1 minute more.
