Steamed Sweet Plantains

Similar to bananas in shape and taste, plantains are sweet and starchy. The extra starch makes them easy to cook.

Ingredients

Serves 2

2 large ripe plantains

2 tablespoons coconut oil

Ground cinnamon to taste

Buying Plantains

Plantains are available in most Hispanic supermarkets. Plantains with black spots are the best plantains to bake or fry. Yellow and soft plantains with not too many black spots are good for steaming.

  1. Prepare a steamer.
  2. Remove about 14" off the ends of the plantains. Peel the plantains.
  3. Place the plantains on the hot steamer. Cook for about 15–20 minutes or until the plantains are soft and cooked all the way to the center. Remove from heat.
  4. Place the hot plantains on a serving dish. While still hot, drizzle 1 tablespoon coconut oil on top.
  5. Sprinkle with ground cinnamon. Enjoy with hot tea or coffee.
