Oh So Scrumptious Christmas Muffin 8: Oozing Marshmallow Muffins

 

 

Preparing for our annual holiday party is always fun and this is how I came up for this tasty delight.

 

While thinking about what to make for the party, my favorite cold-weather treat souvenirs and recipes popped to my mind.

 

Yes, you guessed it! Hot cocoa and marshmallows. So the problem is how do I capture the flavors of marshmallow and hot cocoa into a baked good?

 

Well, I like my cocoa full of dark chocolate (the Italian style) and topped with a generous amount of marshmallows. What an inspiration for a muffin base. The best way to go about this is to use my proven and tested dark chocolate muffin base and to that I am adding a wonderful marshmallow buttercream.

 

The sweet and fluffy marshmallow buttercream taste complements this rich dark chocolate muffin taste wonderfully.

 

For the garnish I am thinking a mini marshmallow topping and this makes a wonderful dessert for our annual holiday party.

 

This recipe makes 12 muffins.

 

Ingredients:

 

8 tablespoons (or 1 stick) of unsalted organic butter (cut the butter into 4)

 

2 ounces of bittersweet chocolate (organic if possible and chopped)

 

1/2 cup of dutch processed organic cocoa powder

 

3/4 cup of all purpose white flour

 

1/2 teaspoon of baking soda

 

3/4 teaspoon of baking powder

 

2 large farm eggs

 

3/4 cup of granulated sugar

 

1 teaspoon of organic vanilla extract

 

1/2 teaspoon table of salt

 

1/2 cup (or 4 ounces) of full fat organic sour cream

 

 

Marshmallow Buttercream:

 

1/2 cup (or 1 stick) of softened unsalted butter

 

1/2 of a jar marshmallow creme

 

1 cup confectioners of sugar

 

1/2 teaspoon of organic vanilla

 

Garnish

 

12 mini marshmallow pieces

 

 

Instruction:

 

It is best if you adjust your oven rack to the lower-middle position.

 

Preheat your oven to 350 degrees.

Combine your butter, the chocolate, and the cocoa in your medium heatproof bowl.

 

Set your bowl over the saucepan of barely simmering water.

 

Next, heat the mixture until the butter and the chocolate are melted.

 

Whisk the mixture until the texture is very smooth and every ingredient is combined.

 

Set everything aside to cool until the mix is just warm to your touch.

 

Whisk your flour, your baking soda and your baking powder in a small bowl and combine everything.

 

Whisk the farm eggs into a second medium bowl to combine the ingredients.

 

Add your sugar, the vanilla and the salt until everything is fully incorporated.

 

Add the cooled chocolate mixture and whisk everything until it is smoothly combined.

 

Sift about 1/3 of the flour batter over the chocolate mix and whisk everything until every ingredient is combined.

 

Next whisk in your sour cream.

 

Sift in all the remaining flour batter and mix until this batter becomes a thick and homogeneous texture.

 

Finally, go ahead and divide the muffin batter evenly among your muffin cups.

 

Bake the muffins for approximately 12-14 minutes and make the toothpick test.

 

Cool your muffins and then transfer each muffin to a cooling rack. Cool the muffins to a room temperature before you get started with the icing process.

 

 

Oozing Marshmallow Buttercream instruction

 

Transform the butter into cream using a stand mixer or a hand mixer and until the butter is fluffy and light.

 

After 2 minutes of mixing or so add your marshmallow creme.

 

Beat until the ingredients are combined for 2 more minutes.

 

Next, add your confectioners sugar.

 

Continue to whisk for yet another 2 minutes.

 

Lastly add your organic vanilla extract and whisk the buttercream until everything is combined into a light and fluffy delicious and oozing cream.

 

You can ice your muffins with a piping bag and the tip of your choice.

 

You can also use a spatula or a knife for the icing process.

 

Top your icing with a la mini marshmallow or chocolate for chocolate lovers and enjoy this oozing dessert!
