Oh So Scrumptious Christmas Muffin 19: Traditional Cranberry Muffins

 

 

This Christmas muffin recipe is for a traditional Cranberry Muffin. You can use fresh cranberries, dried cranberries, or red cherries (fresh or dried) if you can not get cranberries. This traditional muffin treat calls for some whipped cream or similar fluffy light cream that you can serve on top of it.

 

Ingredients

 

1 cup (100 g) of fresh or dried cranberries (reserve ¼ cup of the berries for the garnish and in case you don't get any cranberries you can also use cherries)

 

½ cup (125 ml) of sherry or freshly squeezed orange juice (from organic oranges)

 

2 extra large organic farm eggs

 

¾ cup (180 ml) of canola or sunflower oil

 

1 cup (250 ml) of organic whole yoghurt

 

¾ cup (180 ml) of whole milk

 

1 x 700 g Ina Paarman's Muffin Mix with Raisins and Bran (you can find this on the shelf)

 

1 large apple (organic), it needs to be grated with the skin on

 

 

Glacé Icing Ingredients

 

1 cup (150 g) of icing sugar

 

2 tablespoons of (30 ml) of hot water

 

2 teaspoons (10 ml) of organic lemon juice

 

Garnish Ingredients

 

Reserved dried cranberries or cherries

 

Icing sugar for sifting

 

Instructions

 

Pour your sherry over the ¾ cup of cranberries (or cherries) and your raisins that you will find in the bag that is included with your Muffin Mix, cover & microwave on high for 1 minute.

 

Leave it for later.

 

Preheat your oven to 180°C and adjust your oven rack to the middle position.

 

Beat your fresh farm eggs and the oil for approximately 2 minutes on high speed with your mixer until well blended.

 

Add your whole organic yoghurt and your whole milk and beat the mixture for around 1 minute on high mixing speed.

 

Add the contents of the pack, the grated apple and the fruit in the sherry.

 

Stir the mixture by hand with a wooden spoon until the mixture is uniformly blended. Do not beat!!!

 

Spoon your mixture into the muffin cups and bake your muffins for around 30 minutes.

 

Allow to cool the muffins and go ahead with the icing preparation.

 

 

Icing Instructions

 

Sift your icing sugar into a medium sized baking bowl.

 

Place it over a small saucepan of simmering water.

 

Stir in the water that is mixed with the organic lemon juice until your icing coats the back of the spoon.

 

Drizzle your icing over the fresh muffins and place the cranberries that you reserved for the icing on top of the muffins.

 

Dust your muffins with icing sugar and serve.
