Oh So Scrumptious Christmas Muffin 23: Amaretto Chocolate Christmas Muffins

 

 

Has anyone remarked how much fun and excitement the Christmas time is for the kids? Yes, children are the ones getting stockings that are stuffed with the treats and the presents. If these kids live in Germany, they get a daily mini-treats in form of an Advent calendar. They are allowed to open one door of the Advent calendar every day during the month of december and out comes either a mini chocolate surprise or a small toy or any other type of sweet delight.

 

Did you notice children get to decorate the gingerbread man, children get to decorate and eat all the Christmas cookies and in some homes children are even allowed to help decorate the tree.

 

Well, I created a muffin that is only for grown-ups and bring them a little Christmas cheer.

 

This muffin that is for adults only does contains amaretto and dark chocolate because this holiday treat is for very sophisticated palates only.

 

Here is what you are going to need for the Amaretto & Chocolate Muffins.

 

 

Ingredients

 

150g all purpose flour

 

100g ground almonds (organic if possible)

 

2 tsps of baking powder

 

1 pinch of salt

 

2 tsps of organic vanilla extract (or if you live in Germany, one packet of organic vanilla sugar will do, too!)

 

2 fresh farm eggs

 

120g of sugar

 

150g of softened organic butter

 

2 tbsps of Amaretto (if you like you can double the amount of the Amaretto)

 

60g dark chocolate shavings (organic)

 

 

Instructions

 

Heat your oven to 180°c

 

Prepare a muffin tray with 12 muffin cases or use the time saving and reusable muffin molds like the Scrumptious & Oozing Christmas Muffin Kit that you can find here: http://answerszone.info/ILike/scrumptiousoozing

 

Sift the flour, the baking powder and the salt.

 

Beat your farm eggs with the organic vanilla extract and until the sugar and amaretto are well combined and creamy.

 

Slowly whisk in the organic butter.

 

Whisk the dry and wet ingredients.

 

Put in the chocolate shavings.

 

Fill each of your favorite muffin cups two-thirds full.

 

Bake your muffins in the oven for 20 to 25 minutes.

 

Once the muffins are ready, remove them from the oven and allow to cool.

 

I had one for breakfast this morning with coffee. I think I have a hangover.

 

 

Topping

 

Next, make a topping of fresh whipped cream and decorate with an Oreo on top of it. I make my own Oreo look alike cookies and the one's that I am using for this recipe are Amaretto flavored ones.

 

Instead of whipped cream you can also make an Amaretto glaze and spread it on your muffins.

 

If you don't like these ideas you can also try an Amaretto creme glacé (ice cream) sprinkled with almonds or a serving of Amaretto poured over it on the side or some delicious Amaretto butter.

 

This one is a delicious delight after dinner served lightly warm and oven fresh with a glass of ice cold Amaretto.
