Southwest “Breakfast for Dinner” Bowls

In your pre-Whole30 days, “breakfast for dinner” might have meant pancakes or waffles swimming in maple syrup. Now it’s these savory bowls of sausage, sweet potato, green peppers, and fried eggs topped with salsa. We promise you will feel so much better when you go to bed!

Heat 1 tablespoon of the coconut oil in a large skillet over medium heat. Add the kielbasa and sweet potato, cover, and cook, stirring occasionally, for 5 minutes. Uncover and cook, stirring occasionally, until the potato is tender and the kielbasa is browned, about 5 minutes.

Meanwhile, heat the remaining 1 tablespoon coconut oil in a large nonstick skillet over medium heat. Add the bell pepper and cook, stirring occasionally, for 4 minutes. Add the cauliflower crumbles and green onions and cook, stirring occasionally, until the pepper is just tender and the cauliflower is heated through, 4 to 6 minutes more.

Spoon the sausage and potatoes and the cauliflower into shallow bowls. Cover with foil to keep warm.

Heat the butter in the nonstick skillet over medium heat. Break the eggs into the skillet and sprinkle with the salt and black pepper. Reduce the heat to medium-low. Cook the eggs until the whites are completely set and the yolks start to thicken, 2 to 3 minutes. Carefully turn the eggs over. Cook until the yolks are to desired doneness, 1 to 1½ minutes more.

Uncover the bowls and place an egg on top. Spoon the salsa on top and serve.
