Heat the butter in a large skillet over medium heat. Add the onion, mushrooms, carrot, bell pepper, and zucchini. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.
Add the salt, parsley, garlic powder, and black pepper and cook, stirring, until combined. Stir in the cauliflower. Cook, stirring occasionally, until the cauliflower begins to soften, 2 to 3 minutes. Add the broth and cook, covered, until the cauliflower is just tender, about 2 minutes. Fluff with a fork and serve.
