Sautéed Sugar Snap Peas

Serves 2

Sugar snap peas are allowed on the Whole30 because they are far more pod than bean. So while they are technically a legume, the green plant matter is good for you. Cook these just briefly so they stay bright green and crunchy.

Heat the butter in a medium skillet over medium heat. Add the shallot, ginger, and pepper flakes and cook, stirring, until fragrant, about 1 minute. Add the sugar snap peas and cook until crisp-tender, 3 to 5 minutes longer. Stir in the coconut aminos and serve.
