Refreshing Stuffed Tomatoes with Quinoa

Step #1: Rinse the Quinoa for about 5 minutes and then cooked in water over high heat for about 20 minutes. 
Step #2: Cook the potato at the same time you are cooking the Quinoa, and peel after cooling. Halve all the tomatoes and then remove the pulp. 
Step #3: Get another bowl and inside mash the potatoes, before adding the Quinoa, pepper, and the mayonnaise. Mix the whole ingredients well and stuff them inside the large tomatoes and serve immediately with the lettuce leaves.
