Wonderful Quinoa Salad with Avocado

Ingredients:

2 cups of quinoa

1/3 cup of chopped red onion

1/3 cup of chopped cilantro

1/3 cup of diced red pepper

¾ cup of diced avocado

3 spoons of lemon juice

1 ½ cup of diced tomatoes

3 tablespoons of olive oil

3/4 teaspoon of salt

1 ½ green chili
-
1/3 teaspoon of garlic
Direction
Step #1: Squeeze your lemon inside a small container and set aside.
Get a bowl and inside, add the red onion with the quinoa, avocado, pepper, onion, tomato and green chili.
Step #2: Get a new bowl, and inside combine the salt with olive oil, coriander, lemon juice, and cilantro. Mix the ingredients together before serving with lettuce and parsley.
