Hugo’s Favorite Lemon Bars

Crust:

2 cups flour

1 cup butter

½ cup powdered sugar

Mix together and then press into a jelly roll pan.

Bake 325º F for 20 minutes.

Filling:

4 beaten eggs

1 teaspoon baking powder

2 cups sugar

4 Tablespoons flour

4 Tablespoons lemon juice (I use frozen from concentrate)

Pour filling over the crust and bake for 25 minutes at 325ºF.

Allow to cool and then sprinkle with powdered sugar.
