BAKED BROCCOLI
AND CAULIFLOWER
Serves 6–8
This vegetable dish is great for parties as you can prepare it in advance, and then just place it in the oven to cook just before the party. To make this dish a winner, ensure that the ingredients are well covered with cheese.
Broccoli 400 g (14⅓ oz), cut into florets
Cauliflower 400 g (14⅓ oz), cut into florets
Carrots 100 g (3½ oz), peeled and sliced
Canned button mushrooms 250 g (9 oz), drained
and quartered
Black peppercorns 1 Tbsp, coarsely ground
Sea salt 1 Tbsp
Italian herbs or mixed herbs 1 Tbsp
Olive oil 4 Tbsp
Onions 2, peeled and quartered
Garlic 4 cloves, peeled and sliced
Cheddar or mozzarella cheese 12 slices
1. Preheat oven to 160°C (325°F).
2. Place broccoli, cauliflower, carrots and mushrooms in a 20-cm (8-in) casserole dish.
Add ground peppercorns, sea salt, herbs, olive oil, onions and garlic. Mix thoroughly.
3. Cover vegetables with cheese, then cover casserole with aluminium foil. Place in
the oven and bake for 30 minutes.
4. Remove aluminium foil and increase oven heat to 180°C (350°F). Leave vegetables
to bake for another 10 minutes.
5. Remove from oven and serve hot.
