Pecan Granola Crunch

 

Just because you are going grain free doesn't mean you can't enjoy a nice treat with pecan granola.

 

Makes 8 servings.

 

Ingredients:

 

*1 cup of pecans (chopped)

*1 cup of dates (chopped)

*1 cup of sunflower seeds

*1 cup of coconut (shredded and unsweetened)

*1/4 cup of maple syrup

*1/4 cup of applesauce

*1 teaspoon of vanilla extract

 

Directions:

 

Prep: Preheat oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper.

 

Combine the cup of chopped pecans, chopped dates, sunflower seeds and shredded coconut in a large bowl. In a separate bowl, mix the 1/4 cup of maple syrup, 1/4 cup of applesauce and teaspoon of vanilla extract. Pour over the nut mixture and toss to coat. Spread the granola over the lined baking sheet. Bake for 15 minutes, then flip the pieces so it gives an even golden brown and bake for another 15 minutes and allow to cool completely before eating. Store in an airtight container.
