The moist flavor of bananas combined with the tangy sweetness of blackberries makes for a delightful treat.
Makes a dozen muffins.
Ingredients:
*2 cups of coconut oil (melted)
*1 cup of blackberries
*3/4 cup of coconut flour
*8 eggs
*2 bananas (very ripe)
*5 tablespoons of maple syrup
*3 teaspoons of cinnamon (ground)
*2 teaspoons of vanilla extract
*1 teaspoon of baking powder
*1/2 teaspoon of salt
Directions:
Prep: Preheat oven to 350 degrees Fahrenheit. Place cupcake liners in 12 muffin tins.
Mix the 3/4 cup of coconut flour with teaspoon of baking powder, 3 teaspoons of ground cinnamon, and 1/2 teaspoon of salt. Set aside. In a separate bowl add the 8 eggs and beat. Stir in the 5 tablespoons of maple syrup and the 2 teaspoons of vanilla extract. Mash the 2 very ripe bananas and stir into the batter. Stir in the 2 cups of melted coconut oil. Gradually add the dry ingredients. Fold in the cup of blackberries. Spoon evenly into the 12 lined muffin tins. Bake until golden brown, about 23 minutes.
