Blueberry Muffins

 

Delicious blueberry muffins are good warm with a pat of butter or margarine. Warm in a microwave for 15 seconds if they have cooled.

 

Makes a dozen muffins.

 

Ingredients:

 

*2 1/2 cups of almond flour

*1 cup of blueberries

*1/4 cup of honey

*3 eggs

*1 tablespoon of vanilla extract

*1/2 teaspoon of baking powder

*1/2 teaspoon of salt

 

Prep: Preheat oven to 300 degrees Fahrenheit. Add cupcake liners to a dozen muffin tins, or spray each tin with cooking spray.

 

Add the 2 1/2 cups of almond flour with the 1/2 teaspoon of baking powder and 1/2 teaspoon of salt. Mix and set aside. Crack the 3 eggs in a separate bowl and beat. Add the 1/4 cup of honey and the tablespoon of vanilla extract and mix. Add the liquid to the dry ingredients and stir. Fold in the cup of blueberries, carefully. Spoon evenly into the 12 muffin tins and bake for about 35 minutes until the tops are a golden brown. Cool slightly before serving.
