This is not the kind of stuffing you may be thinking about, it is delicious stuffed mushrooms with not a grain in sight.
Makes 6 servings.
Ingredients:
*1 pork (or lamb) roast (boneless - at least 2 pounds)
*16 bacon slices (divided 6 and 10)
*12 mushrooms (large caps only)
*1 1/2 cups of spicy mustard (divided in half)
*1/4 cup of onion (minced)
*2 mushrooms (large, chopped)
Directions:
Prep: Preheat oven to 350 degrees Fahrenheit.
Poke a fork over the surface of the pork roast. Place the roast in a roasting pan. Brush most of the 3/4 cup of spicy mustard over the poked holes and surface. Take 10 strips of bacon and wrap over the top, aiming to cover the roast. Brush the bacon with a little of the spicy mustard. Bake for an hour, making sure the pork is well done (145 degrees Fahrenheit in the center). Cook the remaining 6 slices of bacon to crispy. Crumble the bacon and mix with the 3/4 cup of spicy mustard, 1/4 cup of minced onion and the 2 chopped mushrooms. Place the mushroom caps upside down in a baking dish. Divide the bacon mixture among the 12 caps. Place in the oven and bake for half an hour. When done, place the pork roast on a serving platter, place the 12 stuffed mushroom caps around the pork roast, and serve.
