Flax Bread

 

This bread makes a great side dish with a nice supper. It goes well with soups and stews.

 

Makes 1 small loaf.

 

Ingredients:

 

*1/2 cup of coconut flour

*1/2 cup of flax seeds (ground)

*1/4 cup of coconut oil (melted)

*1/8 cup of water

*5 eggs

*1 teaspoon of baking soda

*1 teaspoon of lemon juice

*1/2 teaspoon of salt

 

Prep: Preheat oven to 325 degrees Fahrenheit. Spray a 7.75x4.5x3 inch loaf pan with cooking spray.

 

Mix together the 1/2 cup of coconut flour, 1/2 cup of ground flax seeds, 1 teaspoon of baking soda and 1/2 teaspoon of salt. In a separate bowl, add the 1/4 cup of melted coconut oil and stir in the 1/8 cup of water. Beat the 5 eggs and add to the liquid along with the teaspoon of lemon juice.

 

Gradually add the dry ingredients into the wet and beat with an electric beater for a couple of minutes, the batter will be thick. Put the dough in the loaf pan and bake until inserted toothpick in the center comes out clean and the top is golden brown, about 40 minutes.
