Enjoy a hot apple and cranberry cobbler with your favorite topping of ice cream or whipped cream.
Makes about 5 servings.
Ingredients:
*4 1/3 cups of sliced apples (peeled and cored)
*1 can of cranberries (16 ounce whole berries)
*1 cup of oats
*1/4 cup of applesauce (unsweetened)
*1/4 cup of soy milk
*2 tablespoons of brown sugar
*1/2 teaspoon of cinnamon (ground)
Directions:
Prep: Preheat the oven to 375 degrees Fahrenheit. Add the 4 1/3 cup of sliced apples and the can of cranberries to an 8 inch baking dish and stir. In a bowl, add the cup of oats, 2 tablespoons of brown sugar with the 1/2 teaspoon of ground cinnamon and mix. Add the 1/4 cups of unsweetened applesauce and soy milk, stirring. Using a large spoon, spoon the "crust" over the fruit, careful not to mix in with the fruit. Press the crust down on top with the back of the large spoon. Place in preheated oven for about 45 minutes, until the crust is golden and crisp. Cool before serving.
Hint: This is delicious served warm with vanilla ice cream.
