Macaroons are delightful cookies that are light and crispy. These are rich in coconut and vanilla.
Makes 3 dozen cookies.
Ingredients:
*3 cups of coconut (unsweetened and shredded)
*1 1/2 cups of almond flour (blanched, fine ground)
*3/4 cup of honey
*1/2 cup of coconut oil
*4 teaspoons of vanilla extract
*1/4 teaspoon of salt
Directions:
Prep: Preheat oven to 200 degrees Fahrenheit. Place parchment on a cookie sheet.
First, mix the dry ingredients of the 1 1/2 cups of find ground blanched almond flour with the 1/4 teaspoon of salt. Add the 3 cups of shredded unsweetened coconut. In a separate bowl, combine the 3/4 cup of honey with the 1/2 cup of coconut oil and the 4 teaspoons of vanilla extract. Stir in the dry ingredients. Drop the cookie dough by the tablespoonful onto a cookie sheet, evenly spacing a dozen cookies on the sheet. Bake until the outside of the cookie is dry and crisp, but the inside will be soft, about 47 minutes. Cool for at least 15 minutes before serving.
