Homemade Pasta—from Pacentro, Italy

Ingredients:

6 eggs, brought to room temperature

1 tsp oil

2 Tbsp water

2 cups flour

“A sprinkle of salt”- Grandma’s words.


Directions:

Add flour to a mixing bowl.

Add water and eggs to flour.

Beat the eggs and water with a fork, eventually mixing it thoroughly with the flour. Do not add the salt yet!

Empty bowl onto floured counter or board.

Knead the dough until it becomes elastic. Too dry? Add more water. Too soft and sticky? Add flour.

Cut into small, desired pieces. (Use a kitchen knife or pasta machine)


Cook:

Fill the stockpot with water. Now add the sprinkle of salt!

Bring to a boil and add the fresh pasta.

Depending on its thickness, it should only need 2-4 minutes to cook, unlike dry store-bought pasta.

Stir gently and cook. When done to likeness, drain and eat!
