Wild Rice

3 cups wild rice

3 cups cold water

Pinch of thyme

Salt to taste

1 tablespoon butter

1. Wash the rice, removing any straw or chaff. Place in a saucepan and add 3 cups of cold water and a pinch of thyme.

2. Bring this to a boil and then turn the heat down as low as possible and let the rice barely simmer for 1 hour. After an hour, add salt and pepper according to your taste and a tablespoon of butter.

3. If you are serving the wild rice with chicken, use 1 cup of chicken stock in place of 1 cup of the water. If you are preparing roast chicken, substitute 1 tablespoon of the pan juices for the butter.
