• 5 to 6 medium-sized Idaho potatoes
• ½ stick butter
• 1 cup hot milk
• 2 teaspoons salt
• ½ teaspoon freshly ground white pepper
• 2 teaspoons freshly cut parsley or some finely cut chives
1. Wash and pare the potatoes. Place them in a saucepan and pour in boiling water to cover. Add the salt and cook briskly for 20 minutes.
2. Drain and mash with a potato masher or put them through a Foley mill. Add the butter, pepper, and salt to taste.
3. Pour in the hot milk and mix well by hand or with an electric mixer until the potatoes are light and fluffy.
4. Spoon the mixture into a heated casserole, dot with butter, and set under the broiler to slightly brown the peaks.
5. Sprinkle over with the parsley or chives and serve piping hot.
