Whipped Sweet Potatoes

4 medium-sized sweet potatoes or yams

1 stick soft butter

⅓ cup brandy

2 tablespoons brown sugar

Fresh grated nutmeg

1. Place the potatoes in a saucepan and pour in boiling water to cover. Cook for 30 minutes or until the potatoes are cooked through.

2. Drain, peel, and put the potatoes through a food mill or sieve.

3. Add the soft butter and brandy and whip the potatoes by hand or with an electric beater.

4. When the mixture is light and smooth, spoon in up to the top of a heated casserole. Don’t even off the top, but leave in a free-form shape.

5. Sprinkle over with the brown sugar and a grating of fresh nutmeg. Set into a hot oven until the potatoes are well heated. Serve hot.
